What it is

Boiled chicken pieces dipped again and again in a whisked egg-and-sour-cream batter and fried in butter, building a thick golden crust: a festive fried chicken quite unlike the sauced jedlibzhe.

Method

  1. Joint the chicken and simmer in salted water until cooked; lift out and let it dry.
  2. Make the khudir: whisk the eggs with sour cream and salt, then whisk in flour to a thick, sour-cream consistency.
  3. Heat plenty of butter in a deep pan until seething; fry the chicken pieces until heated through, then lift out.
  4. Dip each piece in the batter, then back into the hot butter.
  5. Repeat the dip-and-fry 2–4 times until a golden crust about 1–1.5 cm thick builds up.
  6. Serve on a flat plate, garnished with vegetables and greens.
