What it is

A Circassian sauce: a warm garlic-and-pepper gravy built on broth and soured cream, poured over meat, poultry, or paste.

Ingredients

Method

  1. Crush the garlic with a little salt into a paste.
  2. Melt the butter in a pan and stir in the flour, cooking until pale gold.
  3. Whisk in the warm broth a little at a time so no lumps form.
  4. Stir in the soured cream and simmer gently 5 minutes until it thickens.
  5. Add the garlic paste, red pepper and black pepper; simmer 2 minutes more.
  6. Taste for salt and serve hot over boiled meat, chicken, or paste.
Tip

Traditionally eaten with paste (millet or corn grits) rather than bread.
