What it is

A dense, unleavened cornmeal bread baked in the oven: the everyday home bread of the Circassians, eaten with cheese, sour cream or soured milk.

Ingredients

Method

  1. Sift the maize flour into a large bowl and salt the boiling water to taste.
  2. Pour the boiling salted water over the flour, stirring to a stiff dough.
  3. Spread it out slightly to cool, then work in the wheat flour for flavour.
  4. Let the dough rest about 2 hours (do not let it turn sour).
  5. Shape by hand into round or oval flat cakes.
  6. Press into a hot, greased pan and cover.
  7. Bake in the oven 40–60 minutes until set. Serve hot or cold with salted cheese, sour cream or soured milk.
