What it is

Leavened millet-flour dough pinched into small rounds and deep-fried until puffed and golden; served with honey, cheese or ayran. Softer and millet-based, distinct from lakum.

Ingredients

Method

  1. Warm the milk with the sour cream/leaven and soda until it foams.
  2. Mix in the sugar, salt and both flours to a soft dough; let it rest and rise.
  3. Pinch off small pieces and flatten into 1-cm rounds.
  4. Deep-fry in hot oil, turning, until puffed and golden.
  5. Drain on paper.
  6. Serve warm with honey, cheese or ayran.
Tip

Keep the dough soft and don't overwork it: that's what makes the puffs light.
