What it is

Thin sheets of dough brushed with melted butter, coiled into a spiral, re-rolled and griddled into a flaky, layered flatbread: eaten instead of bread or with tea.

Ingredients

Method

  1. Mix the flour, water and salt into a soft dough; rest 20 minutes.
  2. Divide and roll each piece out very thin.
  3. Brush all over with melted butter.
  4. Roll the sheet up into a rope, then coil the rope into a flat spiral.
  5. Gently roll the coil out flat again into a round.
  6. Cook on a dry hot pan, browning both sides; brush with butter and serve warm.
Tip

The butter between the layers is what makes it flaky: brush generously.
