What it is

A light, tender honey sponge, baked golden and dusted with sugar, often served with fresh berries: a soft Adyghe tea cake.

Ingredients

Method

  1. Heat the oven to 180°C and line a round tin.
  2. Whisk the eggs with the sugar to a thick, pale foam.
  3. Warm the honey until runny and whisk it in.
  4. Fold in the flour, soda and salt gently, keeping the air.
  5. Pour into the tin and bake 30–35 minutes until springy.
  6. Cool, dust with powdered sugar, and serve with berries.
Tip

Fold the flour, don't stir: knocking out the air makes the sponge dense.
