Method
- Scoop the watermelon flesh and mash or blend it.
- Strain out the seeds and pulp to get clear juice.
- Bring the juice to a boil, then lower the heat.
- Simmer, stirring often, until it reduces to a thick brown syrup the consistency of honey.
- Skim any foam; test a drop: it should hold its shape.
- Cool and store in a jar; use like honey.
