Method
- Toast the walnuts in a dry pan until fragrant, then cool.
- Pound or chop them coarsely: some pieces, some crumbs.
- Warm the honey gently until runny (do not boil).
- Stir the walnuts through the honey until well coated.
- Pack into a clean jar and let it stand a day for the flavours to marry.
- Serve by the spoonful, with tea, or over cheese or paste.
