What it is

Plums, cherry-plums or apples cooked down to a thick purée, spread thin and dried in the sun into a tart, rolled fruit leather.

Ingredients

Method

  1. Pit and chop the fruit; cook with a splash of water until completely soft.
  2. Pass it through a sieve to a smooth purée; discard skins.
  3. Return to the pan and simmer, stirring, until very thick and glossy (sweeten now if you like).
  4. Spread thinly and evenly (about 3–4 mm) on an oiled board or lined tray.
  5. Dry in strong sun (or a low oven / dehydrator) until it peels away and is no longer sticky.
  6. Roll up and store dry; slice off pieces to eat, add to tea, or soak as a pastry filling.
Tip

Spread it evenly: thin spots crack and thick spots stay tacky.
