What it is

Strips of egg dough deep-fried until reddish, then bound in boiled honey syrup and pressed into a shaped mass that is cut into pieces: a Circassian honey-fritter sweet.

Ingredients

Method

  1. Whisk the eggs with vodka, sugar, salt and soda, then work in flour to a soft dough.
  2. Divide into a few lumps and cut into thin strips no wider than 1/2 cm.
  3. Heat plenty of butter and oil and fry the strips until lightly reddened; lift out to drain.
  4. Boil the honey with the sugar until a drop forms a soft ball in cold water.
  5. Pour the hot syrup over the fried strips and stir to coat.
  6. With a wet hand, press into a slab of any thickness.
  7. Cool, then cut into pieces and serve.
